Lovely smooth and tangy hummus alternative. Goes great with homemade pita chips, fresh cut veggies, or cassava chips.

Ingredients

 14.50 ounces Artichokes (canned in water)
 1 ounce Avocado oil(you can use all avocado oil or all olive oil too but all olive oil adds a bit too much bitterness for my taste)
 1 ounce Olive oil
 ¼ Lemon, squeezed
White ceramic plate with yellow sauce, brown chips and brown olives

Directions

Drain brine from canned artichokes. Remove artichokes from can and squeeze out excess liquid.

Add artichokes to jar along with oil and lemon juice. Insert immersion blender. Blend until smooth. Serve and enjoy
