Tender shredded chicken is easy peasy in the instant pot! Use tasty shredded chicken in lettuce wraps, salads, burrito bowls, chicken salad, etc.
Ingredients

Add bone broth to instant pot. Salt chicken and add to bottom of instant pot
Place the lid over the instant pot, click to close, and make sure the pressure valve is sealed. Set for pressure cook on high for 12 minutes (be sure to click off "keep warm" so the pressure cook starts).
When the instant pot timer finishes, allow the pressure to release naturally for 5 minutes and then feel free to quick release the rest of the pressure or allow it to continue to naturally release if you have the time. Be careful to keep your hand out of the way of the steam when you quick release the valve.
Remove the lid and use two forks to shred the chicken. Strain out excess bone broth and it's ready to serve! Goes great in AIP chicken salad, tacos, burrito bowls, etc.
