Delicious stir fried veggies with pre-cooked sausage topped with avocado makes for a decadent, quick and easy breakfast. Stores well in the fridge for several days so you can make a big batch and enjoy it throughout the week.

Prepare all veggies. Chop onion, mushrooms, kale and zucchini
Slice sausage into 1/2 inch pieces. Add avocado oil to large frying pan and cook for 5 minutes, or until browned on both sides. Transfer sausage to another bowl and set aside.
Add sliced onion to the frying pan and cook for 3 minutes or until slightly tender.
Add sliced crimini mushroom and cook for 5 minutes, until they release their juices.
Add chopped zucchini and cook for 1 minute.
Add shredded kale and cook for 2 minutes.
Add cooked sausage and cook 1 additional minute to warm. Serve immediately. Garnish with fresh sliced avocado.
